RITZ CRACKER PIE W/Chocolate Whipped Cream Topping

This Ritz Cracker Pie recipe was a family favorite especially around the holidays.
The chocolate whipped cream topping is a perfect compliment to the Ritz cracker pie mixture which is light yet rich. Be sure to separate the egg whites carefully and beat them until they are stiff.

Great family recipe for kids who love to help in the kitchen. They can easily prepare the chocolate topping. Who can resist licking the spoon, kids of any age!! Be sure to refrigerate any leftover pie, although we doubt you will have any leftovers! We recommend that you perhaps prepare two pies if you are planning a large holiday family gathering.

If a family member or guest is allergic to nuts you may omit this ingredient from the recipe.

Pie Mixture:

3 egg whites
1 tsp. baking powder
1 c. sugar
1 tsp. vanilla
1/2 c. chopped walnuts
20 Ritz crackers

Roll Ritz crackers well with a baker’s roller. Beat egg whites until stiff. Gradually add 1 cup sugar, baking powder, vanilla, and nuts. Gently fold Ritz crackers into mixture. Pour into greased pie plate. Bake at 325 degrees for 25 – 30 minutes. Cool.

Chocolate Whipped Cream Topping

Topping:
1/2 Pt. Heavy Cream
1/3 c. Baker’s Cocoa
1/2 c. sugar

Stir ingredients together, put mixture in your refrigerator for one hour.
Whip and spread on top of your pie. Enjoy!

Do you keep your health care plan in the fridge? It’s not a bad idea actually because if you pick your foods the right way, you can pack heart disease, colon cancer, osteoporosis, and diabetes prevention all in a day’s worth of groceries.

Heart Disease

It kills nearly 500,000 women a year. The American Heart Association warns that heart disease, including stroke, claims more women’s lives than the next six causes of death combined. Yet few women realize their risks for heart disease.

Hip 30-something singer Toni Braxton thought her chests pains were just from parenting stress before she discovered that she had heart disease. While the singer is OK now, she’s getting the word out about heart disease as the spokeswoman for the American Heart Association’s “Go Red For Women” campaign.

If you want to be heart smart, you need to be food wise. For example, according to the Tufts University Health & Nutrition Letter, a diet loaded whole grains may lower your risk of developing heart disease.

Other clinical research from the Archives of Internal Medicines found a link between increased dietary fiber and reduced blood pressure. In short, more fiber my reduce hypertension and thus lower the blood pressure.

Where to get fiber and whole grains:

Apples, grapes, celery, whole grain bread and cereal (make sure that sugar is not a main ingredient), whole-wheat pasta, popcorn, barley, oats and oatmeal, rye, corn, brown rice, bulgur or cracked wheat, and wheat germ

Colon Cancer

The fiber gleaned from a whole oat rich diet also reduces the risks for developing colon cancer. Similarly in animal studies, selenium has shown anti-cancer benefits. Researchers from the Harvard School of Public Health noted that calcium limits the development of rectal lesions, which could become cancerous.

Broccoli, bran, brown rice, cottage cheese, garlic, onion, Brazil nuts, molasses, eggs, yogurt, celery, tahini, kidney beans

Osteoporosis

Are you going scream if someone else tells you to drink your milk to make strong bones? While calcium has hoarded the spotlight for osteoporosis prevention, Dr. Alan R Gaby points out in the Townsend Letter for Doctors & Patients, that magnesium, manganese, and zinc are just as important in the fight against osteoporosis.

Where to get them:

Magnesium:
Almonds, bran, oat, hazel nuts, pecans, lentils, sunflower seeds.

Manganese:
Avocado, walnuts, pineapple, buckwheat, parsley, spinach

Zinc:
Cheese, raw cashews, egg white, sunflower seeds, macadamia nuts, wheat germ

Diabetes

Christine Gerbstadt, M.D., R.D., spokeswoman for the American Dietetic Association suggests limiting your risks for diabetes by consuming orange and leafy green veggies. Adding on a high quality fiber rich cereal can also limit your risk for diabetes.

Where to get orange and leafy green veggies:

Spinach, yams, papayas, peppers, rich green varieties of lettuce, lemons, parsley, cilantro.

Here’s a final reason to stash your health care plan in the fridge. A finding presented at the Annual Scientific Session of the American College of Cardiology that analyzed the records from 2,857 heart attack survivors treated at Michigan hospitals found that men had a better chance of surviving after treatment than women.

One reason for this could be that the women receive less one-on-one sessions with the doctors or nurses before going home. The lesson here is to put health in your own hands before you even need to use your health insurance.

Sun Tzu in the Art of War talks about the perils of a leader who lacks the ability to be decisive. When battling in business today, you are watched very closely as a leader. One thing that teammates of a leader will not forgive is lack of certainty. By your words, voice qualities and body language – you either transfer certainty or you transfer doubt. People want to follow a leader who can clearly paint a compelling picture of the future. The events of the past several years have shaken that trust in corporate America with a sting of disappointments.

Maybe your company saw it stock price chopped by 80% or more, had repeated downsizings or even went out of business. There still are many companies and individuals in the survival mode today. They are concerned with surviving and not thinking how they can out innovate, out think and out hustle the competition.

What difficult leadership situations have you found yourself in the last few years? One simple concept to remember when facing adversity is that there is a difference between difficult and impossible. A couple years ago when playing for the Arizona Cardinals, Jake Plummer and his team found themselves down my 21 with twelve minutes left against the Eagles in Philadelphia. Most teams would fold in that situation, but the Cardinals had Jake. According to an article in Sports Illustrated, this was not a new situation for him. In six seasons there he directed 21 game-winning drives in the forth quarter or overtime.

The story in the newspaper by the AP quoted Jake as saying, “With 12 minutes I don’t think I had to say it, but I did anyway.” I said, “We’re down, but we’re still in it!” Then he went down the benches yelling, “You gotta’ believe!” They came all the way back and won the game 25-24 on a last second field goal by Chris Jacke.

I’ll bet he didn’t go to just anybody on the bench. He went his “go to” guys that he knew he could ignite a spark of conviction in first. He did it with enthusiasm, conviction and planted the seed of possibility in their minds. Sometimes to turn around momentum, all it takes is one person who makes a decision. A key belief to adopt as a leader is:

I can rally others to believe in what has not happened yet.

What can you do to test yourself? Set up a video camera to record your performance speaking to your team. It takes guts to record and even more to watch it. You get more feedback on what you are doing well and how to improve quickly than you can imagine.

When faced with adversity on the job or at home, how do you handle it? Does you attitude quickly become negative and resort to the “this is going to be impossible to turn around” mode? Or do you think, “I love a challenge. This is not going to be easy, but it is absolutely possible!” Once you can get yourself, a teammate or one of your children to acknowledge that the challenge ahead is difficult but not impossible, then the brain kicks in and says: Then there is a way to overcome this? What is my first step?” Companies today are starving for leaders to step up and take a stand. Victory in the next battle your company faces may hinge on you.

I’ve navigated plenty of speed bumps on life’s road. My father’s death led me to an entirely different career than my planned one. My business burned to the ground. Unscrupulous partners left me with a $15 million dollar debt. My doctor diagnosed me with a disease that a year earlier would have meant probable death.

Some people call it adversity. I call it life. I’m going to share with you my philosophy for dealing with the downs that will no doubt accompany the ups. Some will make you want to smack your forehead because they are so obvious. But as I mentioned earlier, the key to business is taking in more than you pay out, and scores of business fail every year because they forget simple things like that.

Finally, I’ve got to say that I’m skeptical of anyone who claims to have the magic solution to your life. These things have worked for me, but they might not work for you. It’s important for you to know yourself, your strengths and weaknesses, and devise a success strategy that fits your personality.

Here is my top-ten list of adversity-busters:

Don’t panic. When something unexpected comes your way, shouting, “Oh my God, I’m ruined!” is not conducive to handling the situation. Remain calm and you’ll send a message to your brain that you might be able handle the situation after all.

Take the emotion out of it. To come up with a rational solution, you have to have a rational approach, and that’s hard to do while your blood is boiling.

Build and use your networks. Develop and maintain a diverse group of associates and friends. Take the initiative in keeping in touch. If you only contact someone when you need their help, they’ll cringe when your number comes up on their caller ID.

Be polite. The bank teller you cursed at might be the vice-president in charge of granting you a loan in a few years.

Get a plan down on paper. Review and list your assets and resources, then make a plan, Figure out what you need to do, and break it down into small steps if the big picture overwhelms you. Pay attention. It’s been proven that what people call ESP is often just a finely tuned sense of what is going on around them. Once Carol Burnett woke up in the middle of the night and decided to move to the other side of the bed to sleep. Shortly after there was an earthquake and a very large, heavy big-screen TV fell from a shelf on to her bed, where she usually sleeps. In her sleep her subconscious sensed small tremors that led to big ones, and she paid attention.

It’s not unusual for me to make a serious business decision after only a few minutes. I get a certain feel about whatever it is I’m considering, and I go with it. I’m not saying don’t be careful, but be aware of the things your mind is trying to tell you. This works whether you’re dealing with adversity or on the lookout for new opportunities. If I hadn’t paid attention when I saw an ad for franchising a new, fledging rental car business, I would have missed out on Budget Rent-A-Car, which turned out to be even more lucrative than the car business.

Don’t waste time looking back. Every second you spend thinking “If only…” or “I should have…” is a second you could spend developing another opportunity. Maybe somebody told you to invest in Microsoft 15 years ago and you didn’t. So what? Dwelling on the past paralyzes you in the present.

Know thyself. Understand your strengths and weaknesses.

View your challenges as opportunities. Earlier in the book I talked about what my stepfather said when my business burned down. He told me it was the best thing that could have happened to me, because I could make a fresh start. That’s the attitude I took. He was right.

Ask for help. Be smart about it when you do. I asked Kansas City businessman Frank Morgan for a $15 million loan and he gave it to me. But first he made sure I knew my business. Give people a reason to help, and they usually will.
